The Dining Divas Discover a Mac and Cheese Heaven\u00a0In University City<\/strong><\/p>\n

I\u2019ve always been fascinated by inventors.\u00a0 I can\u2019t even fathom what went through the minds of men like Thomas Edison or Alexander Graham Bell.\u00a0 What about the person who created the World Wide Web (no, not Al Gore)?\u00a0 Or the person who created the gas pump clip so you don\u2019t have to stand there and hold the nozzle to get gas?\u00a0\u00a0 Why didn\u2019t I think of that?<\/p>\n

\"Lisa<\/p>\n

For me, ranking right up there with Edison and Bell is the person who invented Macaroni and Cheese.\u00a0 (Italians may say Marco Polo.\u00a0 Others give Thomas Jefferson the credit.)\u00a0 Kraft Mac and Cheese is a staple in my household like sugar and Smarties (aren\u2019t Smarties a staple in most households?).\u00a0 Once again, why didn\u2019t I think of that?<\/p>\n

For the owner of a new restaurant in The Loop called Cheese-ology, who invented Mac and Cheese isn\u2019t as important as who\u2019s perfecting it.<\/p>\n

Cheese-ology does one thing really well.\u00a0 Macaroni and Cheese.\u00a0\u00a0 Think of a combination, and they probably serve it.\u00a0 Mediterranean, The Hill, Philly Cheese.\u00a0 For bacon lovers, there\u2019s Bacon, Bacon Mac and Cheese.\u00a0 For the finicky eater, there\u2019s the Classic Mac and Cheese with just cheese.<\/p>\n

This Diva wasn\u2019t the only Diva excited about this restaurant.\u00a0 We all were.<\/p>\n

It didn\u2019t matter that the Diva night interfered with work schedules.\u00a0 We moved it.\u00a0 It didn\u2019t matter that a Diva\u2019s husband couldn\u2019t baby-sit.\u00a0 We brought the baby.\u00a0 It didn\u2019t matter that the restaurant didn\u2019t take reservations.\u00a0 We\u2019d squeeze together.\u00a0 We just wanted to try out a Macaroni and Cheese restaurant!<\/p>\n

At Cheese-ology, the main course is served in iron skillets, small or large.\u00a0 I\u2019d recommend a small, especially if you\u2019re meal is followed by birthday cake.\u00a0 Most of us ordered larges because we were so intrigued by the menu, and most of us left overly full.<\/p>\n

The Tuna Macaroni and Cheese tasted like Mom\u2019s tuna casserole according to the Mommy Diva.\u00a0 The Santa Fe with chicken, corn, salsa, and spices had a southwestern spirit we all enjoyed.\u00a0 Everyone was envious of the Shrimp Scampi Mac and Cheese.\u00a0 It was a cheesy delicacy.\u00a0 You can order it with chicken if you\u2019re not a fan of seafood.\u00a0 I wouldn\u2019t change a thing.<\/p>\n

The Educator Diva tried the Black and Bleu version.\u00a0 It had steak, American and bleu cheese, and Cajun spices.\u00a0 Several curious Divas were excited to see what she thought of it, but she was disappointed.\u00a0 It was average compared to the rest.<\/p>\n

We shared birthday cake with the staff and offered some to the owner.\u00a0 He had to save his taste buds for new inventions that evening as he tries out new ideas after hours.\u00a0 The ones he likes, he offers as specials.\u00a0 The Pulled Pork BBQ Macaroni and Cheese special was very popular this summer.\u00a0 It may eventually make the menu.\u00a0 We decided Mac and cheese combinations could be endless.<\/p>\n

Of course, we couldn\u2019t think of any that night.\u00a0 And I\u2019m sure the next time I go, I\u2019ll be saying \u201cWhy didn\u2019t I think of that?\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"
